Supercharged Banana-Nut Oatmeal Cups: A Gut Health Promoting Recipe

Today’s recipe is an easy breakfast option that is packed with gut-healthy ingredients like oats, bananas and nuts that not only provide great flavour but also provide essential vitamins and minerals to keep you energized for the day.

This easy-to-follow recipe will give you a hearty snack that is great for when you’re on the move, in a hurry, or just fancy a little treat,  but don’t want to break any of your good habits. 

Ingredients that you will need: 

  • 3 cups rolled oats (as they are, or blended into oat flour)
  • 2 ripe bananas, mashed
  • ½ cup chopped nuts (of your choice)
  • 1 or 1.5 tablespoons of JUVIA (depending on what phase you’re on)
  • ½ teaspoon cinnamon
  • Pinch of salt
  • 1 teaspoon of baking powder 

Optional ingredients: 

  • ⅓ cup of brown or coconut sugar (for those that need a little more sweetness)
  • 1 teaspoon of vanilla extract 
  • 1 ½ cups of milk (dairy or non-dairy, preferably unsweetened) 
  • 2 large eggs, lightly beaten 

Instructions to follow: 

  • Preheat oven to 375°F and line a baking sheet with parchment paper, or coat a muffin tin with cooking spray. 
  • In a medium-sized bowl, mix together the oats, mashed banana, nuts, cinnamon, salt, baking powder, etc, and optional ingredients (milk,  sugar, and vanilla extract).
  • Scoop mixture into individual muffin cups on the baking sheet and press down with a spoon to form an even layer, or divide the mixture into the muffin tin.
  • Bake for 20-25 minutes or until golden brown and crispy on the edges. A useful tip to determine if they are ready is to poke the mixture with a toothpick. If it comes out clean, presto!   
  • Once it is ready, let it cool for 10 minutes, then take a shot of JUVIA (mixed in a little water), or spread some over the individual muffins for added sweetness.
